What is at the heart of most of our favorite wintertime comforts foods? A great stock or sauce. Join Chef Matt Greene of JM Stock Provisions to take your stock and sauce making to the next level, and to learn the core recipes that build the foundation for great sauces. Matt will demonstrate how to make an egg-based hollandaise and a roux-based sauce, as well as basic variations on stocks. During this class, guests will also learn how to prepare a perfectly cooked cut of meat indoors, in a cast-iron skillet or pan of your choice. Knife Skills and Poultry Break Down

Learn Basic Knife Skills and how to break down a chicken with Matt Greene of JM Stock.Time to hone your knife skills? No better time to start than in the New Year. Join Chef Matthew Greene of JM Stock Provisions and learn how to master a basic large dice and fine dice, as well as julienne cuts. In addition, you will break down your own locally pasture-raised River Oak Farm chicken, a skill that will serve you well for a lifetime. All class participants will take home their chicken, which is included in the price. During the session, Matt will also cook a classic cut of beef and demonstrate proper meat slicing techniques. Class includes a basic overview of knives and knife care. Pig Butchery & Cooking Tips

This class will be at JM Stock’s Butcher shop at 709 W Main St.  Join Matt Greene to learn the basics of modern pig butchery during this fun introduction to the craft of sustainable meat production. During this 2 hour class, we will discuss the various cuts, preparations, and what it takes to produce JM Stock pork from start to finish. Beverages will be provided along with an array of house made charcuterie, sausage, and some of our favorite less-common cuts!

Just in time for winter, this will class will show you key skills for making perfectly cooked meat (no grill required), and bases for wonderful winter soups and stews.This class will teach you how to make a perfect stock and basic variations. Matt Greene will also demonstrate how to make two sauces: an egg-based hollandaise and a roux-based sauce. In addition, participants will learn basic techniques for cooking steak in a cast-iron skillet.
