Join us on Valentine’s Day for an evening of delicious Coffee. Award winning coffee roasters Red Rooster will be demonstrating the differences between French Press brewing and the Classic Chemex.

Philip Hatter will be just back from “The Brewer’s Cup” competition, where he will be showcasing Red Rooster’s Award winning Ethiopia Hambela Natural. He will demonstrate the perfect cupping technique using this amazingly complex and intense coffee.

Classic Italian Risotto with Fennel and Arugula Salad

Sunday, February 19th 5-6:30pm $40 per Person 16 person maximum

Join Chef Ingrid Berger as she shows us how to make a classic Italian Risotto and a delicious salad to pair with it. These days recipes abound for making risotto a quick way but in this class we will stick to the traditional method.  Risotto is unique to Italy and the cooking method uniquely Italian.

Participants will be welcome at the stove to stir the the rice as it becomes risotto.

(The final step in making risotto is called mantecare – if you’d like to learn what that means, come to the class!)

Join Chef Matt Greene of JM Stock Provisions to take your stock and sauce making to the next level, and to learn the core recipes that build the foundation for great sauces.

Matt will demonstrate how to make an egg-based hollandaise and a roux-based sauce, as well as basic variations on stocks.

During this class, guests will also learn how to prepare a perfectly cooked cut of meat indoors, in a cast-iron skillet or pan of your choice.

Knife Skills and Poultry Break Down

Learn Basic Knife Skills and how to break down a chicken with Matt Greene of JM Stock. Time to hone your knife skills? No better time to start than in the New Year.

Join Chef Matthew Greene of JM Stock Provisions and learn how to master a basic large dice and fine dice, as well as julienne cuts.

In addition, you will break down your own locally pasture-raised River Oak Farm chicken, a skill that will serve you well for a lifetime.

All class participants will take home their chicken, which is included in the price.

During the session, Matt will also cook a classic cut of beef and demonstrate proper meat slicing techniques.

Class includes a basic overview of knives and knife care. Guests are welcome to bring their favorite knife from home or will be provided one.
